This version, with sliced potatoes, seasoned with garlic and scented with thyme, is a simple yet truly tasty side dish, perfect to serve whenever I want something crispy and flavorful without too much effort.
These baked potatoes with garlic and thyme are a really versatile side dish: they pair excellently with roast meats, chicken, or grilled steaks, but they also go well with baked fish (sea bream or bass) or a simple salmon fillet.
Even with a cheese board like we enjoy or a vegetarian dish, they remain perfect, because their aroma and crispy crust pair divinely with any course!

Procedure
Well, well… I wash the potatoes thoroughly, dry them, and then slice them about 0.4 inches thick.
With a nice sharp paring knife, I score them in small diamonds so they cook faster and become even crispier!
I line the baking tray with parchment paper and arrange the slices without overlapping, placing them neatly in a single layer.
In a small bowl or glass, I mix oil, salt, and pepper, along with very finely chopped garlic either with a knife or in a food processor.
I brush the potato slices with this tasty emulsion and also add a few fresh thyme leaves.
I just need to bake them in a preheated static oven at 392°F for about 25/30 minutes, making sure to turn the slices halfway through cooking.
Now that they are tender and succulent, I serve the sliced baked potatoes with garlic and thyme at the table.

Tips
If you don’t like thyme, replace it with rosemary or sage.
