Ingredients
- 2.2 lbs potatoes
- 3.5 oz speck (sliced)
- 1 cup mozzarella
- 0.5 cup grana cheese (grated)
- rosemary
- butter
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of the Potato and Speck Casserole
Peel the potatoes and cut them into chunks.
Place them in a pot and cover with cold water.
Bring to a boil and let them cook for five minutes from boiling point, then drain and let cool.Meanwhile, cut the mozzarella into pieces and the speck into strips.
Place the potatoes in a bowl, add the mozzarella and speck, half of the grated cheese, some rosemary, and salt, and mix thoroughly.Butter a baking dish and coat it with breadcrumbs.
Pour in the potato mixture, level it, and sprinkle with the remaining grated cheese and some butter flakes.
Bake in a static oven at 350°F for about twenty minutes.
Remove from the oven, let cool slightly, and serve your potato and speck casserole.
