  • 7 oz (200 g) butter

  • Transfer the dough to the work surface, compact it into a disk and wrap it in cling film. Refrigerate for 1 hour.

  • Take the shortcrust pastry back, lightly flour the work surface and roll it out not too thin, about 3/8 inch thick.

  • Cut out discs with the cookie cutter.

  • Place each disc into the muffin liner, prick the base with a fork. Let rest in the fridge for about 30 minutes.

  • Place the baskets on a baking sheet and bake 15–20 minutes at 356°F
