Artichokes baked in the air fryer, an easy and quick recipe to make, perfect as a side dish or appetizer.
Depending on the varieties and regions, it is possible to find artichokes from October to May/June.
There are many different artichoke varieties known to many.
Let’s start with the Sant’Erasmo violet artichoke, from the Venetian lagoon.
Here is a small list of the most well-known artichokes.
-Perinaldo artichoke, a violet variety that is said to have been imported by Napoleon Bonaparte.
-Sicilian Violet Artichoke, a native variety to be consumed grilled or fried.
-Spiny Artichoke of Sardinia, a variety that has received DOP recognition.
-Romanesco Artichoke from Lazio, IGP variety
-Mammola, also known as the Romanesco artichoke harvested before full maturity.

Ingredients
- 3 mammola artichokes
- 1.41 oz breadcrumbs
- 1.76 oz cheese (grated)
- 1 lemon
- 1 clove garlic
- to taste extra virgin olive oil
- 1 pinch fine salt

Steps
To make air fryer baked artichokes, first clean the artichokes well.
Remove the woodiest part of the stem and the outer leaves, the harder ones, until you reach the tender, lighter ones.
Cut off a good portion of the top, halve and remove the spongy part with a sharp knife.
Slice the artichokes and immerse them in a solution of water and lemon juice.
Clean the garlic and cut it into small pieces.
Place it in a bowl with the drained artichokes, breadcrumbs, grated cheese, and a drizzle of oil.
Mix well and place the seasoned artichokes in the air fryer basket lined with parchment paper.
Add a little more oil, spread the artichokes well, and cook in the air fryer at 356°F for 12 minutes, or until they are crispy on the outside but soft inside.
Serve hot at the table.
