Simple to make and delicious, the Air Fryer Glazed Colorful Carrots are a tasty side dish that involves marinating in oil and honey after a quick preparation.
For this recipe, I chose colorful carrots, but you can easily use the more common orange ones available in the market.
If you want, I will share some interesting facts about these differently colored carrots.
The purple carrots are certainly less common than the characteristic orange carrots and owe their color to the presence of anthocyanins, pigments rich in antioxidants.
In fact, they are present in every variety of carrot.
Moreover, purple carrots contain various types of nutrients and vitamins, as well as minerals that contribute to the proper functioning of the whole body.
They are less sweet and have a more “earthy” aftertaste.
The yellow carrots, on the other hand, contain a high content of lutein, commonly known as the “vision protein,” an important antioxidant protective for vision.
Additionally, some benefits also concern the cardiovascular system, as antioxidant substances help prevent lipid peroxidation while potassium helps maintain blood pressure at the right levels.
