Steps
To prepare the Baked Chicken and Vegetable Skewers, first cut each chicken thigh into six similar cubes.
Alternatively, you can use chicken breast.
Place them in a bowl to marinate with oil and salt, after mixing them well, for 20 minutes.
Wash and cut the bell pepper slices into 9 or 12 pieces, depending on how colorful you want the skewers.
Cut the zucchini into slices about 0.4 inches (1 cm) thick.
For the recipe, we will need 12 zucchini slices.
Now assemble the skewers by alternating the vegetables with the meat.
I started with a zucchini slice, continuing with the meat, and followed by the bell pepper.
I alternated the ingredients in this order for all the skewers until the end.
Arrange the skewers on a baking tray with parchment paper, drizzle with the meat marinade, and bake in a preheated fan oven at 383°F (195°C) for 35 minutes, turning occasionally.
You can also prepare this recipe in a pan or air fryer.
