For this recipe, you don’t need stale bread but you can safely use fresh bread. Generally, I love baking, but if you want to fry them, I recommend adding a bit of breadcrumbs to achieve a firmer final texture.
One of the essential steps, however, is to blend the breadcrumbs with the speck, so they mix well with the ground meat and you don’t have large pieces that might be disturbing while eating.

Ingredients
- 14 oz ground beef
- 1 egg
- 1/4 cup grated Grana Padano
- 2 oz breadcrumbs
- 1 tsp salt
- 2 oz speck

Steps
To make the Beef Meatballs with Speck, first, in the mixer, combine the coarsely broken breadcrumbs with the speck and grated cheese, and blend until you get a sandy consistency of all the ingredients.
Remember, perform this operation several times, to prevent the breadcrumbs from releasing too much moisture when heated with the blades.
Add them to the meat, egg, and salt, and work until you get a soft but uniform dough.
Shape the meatballs to the size you prefer.
You can also shape them like a hamburger.
Place them on a baking tray lined with parchment paper.
I don’t add oil but if you want you can put a bit on each meatball.
Cook in a preheated fan oven at 385°F for 20-25 minutes, turning them halfway through cooking.
Take out of the oven and enjoy hot with a nice salad.
