Ingredients

  • 1.75 lbs potatoes (net of waste)
  • to taste chopped parsley (fresh)
  • 1 tbsp coarse salt
  • 2 tbsp extra virgin olive oil

Steps

  • To make the Boiled Potatoes with Parsley, first peel the potatoes and cut them into cubes about 1 inch on each side.

    Wash them very well under cold running water.

    Bring a pot of plenty of salted water to a boil and immerse the potatoes in it.

    Cook them until, when pierced with a toothpick or the prongs of a fork, they enter without resistance.

  • Drain.

    Meanwhile, finely chop the parsley.

  • In a large bowl, place the potatoes, extra virgin olive oil, parsley, and mix gently.

  • You can serve the side dish warm or cold and even enrich it with finely chopped garlic.
