Butternut Squash and Stracchino Cream

Butternut Squash and Stracchino Cream, an easy and tasty dressing, made using butternut squash as the ingredient, in my opinion, one of the easiest to clean, in just a few steps. I personally used this recipe to dress a delicious baked pasta that is stringy and tasty, but you can use it as a dressing for any type of pasta, whether long or short, fresh or dry. It can also be prepared in advance and frozen for later use, even multiplying the recipe’s quantities I propose. The butternut squash is a typically winter squash with particularly light skin, while the inside is a bright, vivid color. It has a characteristic elongated pear shape, and for me, it’s among the easiest to clean. Ingredients

  • 10.5 oz butternut squash (sliced, net of waste)
  • 7 oz stracchino
  • 1 slice onion
  • 2 tbsps extra virgin olive oil
  • to taste pepper (freshly ground or powdered)
  • to taste fine salt
  • to taste chopped parsley

Steps

  • To make the Butternut Squash and Stracchino Cream, first cut 300 grams of squash into thin slices as shown in the picture.

  • Remove the skin.

  • Arrange the squash slices in the fryer basket covered with parchment paper.

  • Add the chopped onion.

  • Add the coarsely chopped parsley, fine salt, extra virgin olive oil, and pepper.

  • Bake in the air fryer for 10 minutes at 356°F.

  • The squash should be soft, so check that it is with the prongs of a fork. If not, continue cooking for another 2-3 minutes.

  • Let it cool for a few minutes before placing it in the blender jug. If you don’t need it immediately, let it cool completely to prevent the stracchino from souring.

  • Blend everything together until you get a creamy and homogeneous consistency.

  • The cream is ready, perfect especially as a dressing, but it can actually also become a delicious main course for two people, perhaps accompanied by tasty croutons of stale bread passed in the fryer, cut into cubes, and seasoned with a little oil and salt.

Storage

You can prepare the cream in advance and, after cooling it, store it in the refrigerator for a maximum of 48 hours, or freeze it.

  • I don’t have an air fryer, how can I cook the squash?

    You can cook it in a fan-assisted hot oven at 356°F for about 20 minutes or until it is soft and workable.

  • With what can I substitute stracchino?

    With ricotta or cream cheese, even crescent cheese will work just fine.
