Carnival Fritters, a recipe that literally drove my kids crazy! Sweet enough, perfect to eat as they are or filled with soft custard cream, they are very simple to make in a preparation reminiscent of classic cream puffs. Strictly fried, otherwise what kind of Carnival recipe is it???

Ingredients
- 2/3 cup all-purpose flour
- 2 eggs
- 3 tbsp butter
- 1 pinch fine salt
- to taste orange zest (grated)
- 1/2 cup water

Steps
To make the Carnival Fritters, combine the water and butter in a small pot and bring to a gentle boil over low heat. Turn off the heat and add the flour, incorporating it into the liquid. Grate the zest of an orange and continue stirring until you get a fairly homogeneous dough
Add the first egg, allowing it to be well absorbed, and then add the second, working vigorously (using an electric whisk if necessary). The final result should be a fairly firm cream. Heat the seed oil to 320°F, using a kitchen thermometer to help. Drop the batter using a large spoon and a small one, and let the fritters brown well, turning them often, cooking them for 3-4 minutes. They should be puffed and almost hollow inside, well cooked. Remove them with a slotted spoon, draining them well, and pass them directly into the sugar.
They are excellent warm or cold, filled or empty, and they keep for a couple of days once cooled and well sealed.
