Chicken bites with sparkling wine and saffron, a recipe for a main course ready in 30 minutes.
This idea was inspired by my partner.
For days, he has been asking me for saffron-flavored meat, knowing that I rarely run out of these ingredients.
Plus, I had some leftover sparkling wine in the fridge from one of my children’s birthdays, and the deal was sealed.
On a Sunday evening, I couldn’t have asked for more from my pantry and stove.
When I come home from work, I’m usually very tired, and even though everyone at home helps out, I still love creating easy and delightful recipes.

Ingredients
- 1.54 lbs chicken breast
- 1/2 cup butter
- 1/7 cup onion
- 7/8 cup sparkling wine
- 7/8 cup water
- 1 packet saffron
- 3/4 cup all-purpose flour
- 1 pinch fine salt
- as needed dried oregano

Steps
To prepare Chicken Bites with Sparkling Wine and Saffron, first cut the chicken into small bites to speed up the cooking of the meat.
In a bowl, combine the flour, salt, and dried oregano.
Mix quickly with a fork.
Bread the chicken bites, removing excess flour.
If you want, you can use a dry colander to help with this step.
In a large pan, melt the butter and add some onion slices.
Add the chicken bites and brown them for a minute, stirring.
Pour in the sparkling wine and let it evaporate over low heat.
When the sparkling wine has reduced, add the glass of water.
Cook for 10 minutes and add the saffron.
Mix very well to distribute the saffron, finishing the cooking with the last 5 minutes.
Serve piping hot.
