Ingredients

  • 1 1/4 cups all-purpose flour
  • 3 tbsps cornstarch
  • 1/3 cup sugar
  • 1 egg
  • as needed candied fruit (to taste)
  • 1 orange (grated zest)
  • 7 tbsps milk
  • 3 1/2 tbsps sunflower oil
  • 1 tsp baking powder

Steps

  • To make the Christmas Muffins with Candied Fruits, first, in a large bowl, pour all the dry ingredients, starting with the flour, adding cornstarch, sugar, and baking powder.

  • Then add the egg, milk, and sunflower oil and quickly mix with a hand whisk to combine the elements.

  • At this point, add the already chopped candied fruits, or, if you want to do like me, with green cherries and candied sour cherries cut into chunks directly in the bowl.

    Incorporate them into the remaining ingredients along with the grated organic orange zest.

  • Pour into muffin liners placed inside the tin, filling them 3/4 full.

    Bake in a preheated fan oven at 356°F for 25 minutes.

    Do the toothpick test to check for doneness and remove from the oven.

  • Let them cool well before decorating as desired.

    I used 30 g of milk chocolate melted with a teaspoon of milk, but you can make the egg white glaze or simply dust with powdered sugar.
