- 1 1/3 cups type 0 flour (all-purpose)
- 1/4 cup powdered sugar
- 2 eggs (medium)
- 1 pinch fine salt
- 1/2 cup milk (can be lactose-free)
- 2 tsp sunflower oil

Steps
To make Fluffy pancakes without butter, first beat the eggs with the powdered sugar in a bowl, mixing well with a whisk until you obtain a smooth mixture.
Next, add the milk and the sunflower oil, continuing to mix. Add the flour and baking powder previously sifted and stir with the whisk. Once you have a smooth and homogeneous batter, let it rest covered for 15 minutes.
If you have a good non-stick pan, it won’t be necessary to add fats. As an alternative to butter you can use a little sunflower oil to lightly grease the pan. When it’s hot, pour the batter — I used an ice cream scoop because it holds the right portion for a pancake. When the first bubbles appear on the surface, flip the pancake using a spatula. Finish cooking on the other side for about 1 minute. Be sure to keep the heat low.
Continue until the ingredients are finished. Pancakes can be topped with hazelnut spread or jams, or with honey and fresh fruit, in addition to the classic maple syrup.

Certainly, you can easily prepare them the night before and store them in an airtight container. In fact, with this technique they will remain soft for 2 days.
