And for the filling, you only need pre-cooked beets, chickpeas, and flour (rice flour is also excellent), you can also add herbs of your choice and all the sauces you prefer, plus cheese cut to create monstrous teeth.

Ingredients

For the beet burger

  • 7 oz beets, boiled
  • 3.5 oz chickpeas (drained)
  • 2 cups all-purpose flour (or rice flour)
  • 2 tablespoons extra virgin olive oil
  • 1 pinch fine salt
  • 6 hamburger buns (small)
  • 6 slices cheese (thin like Edamer)
  • to taste ketchup (or sauce to taste, preferably dark)
  • 12 olives (sliced)

Steps

  • To make the Halloween Monster Burger monstrous vegetarian sandwiches, we start by making the beet and chickpea burgers.

    In a food processor, blend the beet dried with absorbent paper with the well-drained chickpeas and 1 cup of flour.

  • Add the salt, the remaining flour, and continue to incorporate the ingredients with a spoon.
    Add the flour little by little until you get a soft but not sticky consistency.

  • Quickly work the dough and roll it out with a rolling pin to a height of about 3/4 inch.
    Use cookie cutters about 2 1/2 inches in diameter to form the six burgers you’ll need to fill the buns.

  • Bake in a preheated ventilated oven at 355°F for 20 minutes after moistening the burger surfaces with extra virgin olive oil.

  • In the meantime, prepare the cheese by cutting it with the same cookie cutter as the burgers and carving out the shape of sharp teeth with a sharp knife.

  • Remove the burgers from the oven.

    Prepare the sandwiches by stuffing them with ketchup, the burger, and the cheese positioned so that it slightly protrudes from the closed bun.

    Decorate with sliced olives and secure the sandwich with a toothpick decorated with some Halloween ideas, and you’re ready to enjoy it.
