Mango and Chocolate Chip Chia Pudding

Chia pudding with mango and chocolate chips, a fresh and light morning for all of you.

Recently at work, I came across many kefir products, like this yogurt which is the fresh protagonist of this recipe, creamy and very tasty.

I chose the classic white one so that I don’t need to add sweetener to the recipe, but you can easily replace it with the 0.1% fat one, depending on the taste you prefer and the ripeness of the chosen fruit.

To enrich it, in addition to the chocolate chips, I decided to add hazelnut crumbs on top, but you can put whatever you prefer.

In these weeks that precede the heat and beyond, you will find many of my recipes with porridge and chia seeds, below I leave you the “old” ones that are always easy to make and with easily available ingredients.

Ingredients

  • 1 cup plain yogurt (kefir)
  • 1/4 cup chia seeds
  • Half mango (ripe)
  • 1 tsp dark chocolate chips
  • as needed hazelnut crumbs

Tools

  • 1 Knife
  • 1 Cutting board
  • 1 Small bowl
  • 1 Teaspoon
  • 1 Blender

Steps

  • To make the mango and chocolate chip chia pudding, first peel the mango.

    For this recipe, we will use half of it; you can store the remaining half for another recipe in a container, or double the quantities of this idea.

    Cut it into cubes and set aside.

    In the blender jug, pour the kefir yogurt, add 2/3 of the mango, and blend until smooth and creamy.

    Put everything in the chosen cup or small bowl and add the chia seeds.

    Mix very well and let rest in the refrigerator for at least an hour and a half.

    After this time, complete the decoration of the chia pudding with the remaining mango cubes, chocolate chips, and the crumbs you prefer.

  • Let rest for at least another 30 minutes, or follow the instructions I left you below.

Storage

You can prepare the mango and chocolate chip chia pudding the night before and cover it with plastic wrap or lids, storing it in the refrigerator for up to 36 hours. It is not necessary to let it rest all night.
