Mediterranean Bruschetta, a really easy and tasty recipe to make for sharing an evening with company.
In this idea, I use fresh but ready pesto, but you can customize it with homemade or your favorite dressing.
For once, I wanted to make it simpler than expected, and I shared my summer idea here on the blog.

Ingredients
- 4 slices white bread
- 1 burrata
- 12 sun-dried tomatoes in oil
- 1.4 oz pesto (to taste)
- as needed extra virgin olive oil (Optional, for the pan)

Steps
To prepare the Mediterranean Bruschetta, first, toast the slices in a pan on one side.
If you want, you can add a drizzle of oil in the pan.
Cut the burrata into 4 parts.
Spread a thin layer of pesto on the bruschetta.
Spread the burrata, adding a few pieces, on the pesto.
Add some drained sun-dried tomatoes. I added three per bruschetta.
Garnish with a few basil leaves and serve immediately.
