Mimosa Bowties

Mimosa Bowties, a very creamy pasta I created for Women’s Day, simple to make but above all very quick and also suitable for dinner.

For this recipe, you need very few ingredients and I honestly used what I had in the fridge, including a slight “leftover” of sheep’s ricotta which you can also omit in the recipe but it helped me to give that slight graininess to recall the mimosa flower.

Additionally, to pick up the color of this beautiful flower, I used saffron powder.

Alternatively, you can also use turmeric dissolved in warm milk.

Ingredients

  • 320 g bowtie pasta
  • 1 packet saffron
  • 200 g cream cheese
  • 100 g sheep ricotta
  • 100 ml milk
  • 14 g coarse salt
  • 1 pinch fine salt
  • 90 g cooked ham (diced)
  • 1 ladle water (hot)
  • as needed pecorino (grated)

Steps

  • To make Mimosa Bowties, first cook the pasta in plenty of salted water, draining it al dente.

    Meanwhile, in a large pan, combine the cream cheese, milk, saffron packet, sheep ricotta, salt, and pepper and mix everything, melting the cheeses over very low heat.

    Add a ladle of hot water.

  • Add the pasta to the mixture and mix very well for a minute over low heat to combine the ingredients.

    Add the cooked ham julienned or diced, turn off the heat, and continue to mix for a few seconds.

  • Finish with some freshly grated pecorino and serve the dish hot.
