Steps
To make the mini zucchini and tomato tarte tatin, wash and thoroughly dry the zucchinis. Remove the stem cap and cut them into thin slices, as shown in the photo. This step will ensure even cooking of the zucchini.
On a baking sheet lined with parchment paper, pour a little oil and add salt and pepper to each “spot.” Lay the zucchini slices on top and garnish them with a little mozzarella. Complete with the tomato, always cut into thin slices and slightly dried with paper towel, and a bit more mozzarella.
Prick the puff pastry and, using round cutters or glasses, cut out circles that should fully contain the zucchini. Place each puff pastry round on top of the vegetable tower and press it down firmly. Brush with a little sunflower oil.
