Mom’s pancakes, an easy and delicious recipe, savory, that my mom used to make and still makes very often, a version no less tasty than my parmesan pancakes.
In their simplicity, they are delicious, and my children love them.
Obviously, I couldn’t help but replicate them and share them with you.
And I’m not ashamed to say that my mother’s version, at over eighty years old, is still the best, probably because there’s an ingredient I don’t have, the grandmother’s love for her grandchildren.
Three ingredients, few steps, and one piece of advice for one of the recipe’s ingredients, the water, which I recommend using very cold and sparkling.
In the recipe, I will indicate a measurement, but keep some nearby to adjust if a more fluid batter is needed.
Mine is rather thick and will serve as dinner because I will fill the pancakes with fresh cheese and cold cuts, but they are also great as a snack for children.
For this recipe, in fact, you won’t need liters of oil, just a little drop every 3-4 pancakes.

- 4 cups all-purpose flour
- 1 teaspoon fine salt
- 2 cups sparkling water (very cold)
- as needed extra virgin olive oil (for cooking)

Steps
To make Mom’s Pancakes, first we put the flour inside the bowl.
Add the salt and mix quickly.
Start pouring a little water at a time, always mixing, until you get the desired consistency.
Continue stirring vigorously to eliminate all lumps, or as many as possible.
In most cases, they will dissolve during cooking.
Let it rest for a few minutes and, in the meantime, heat a pan with a little oil on low flame.
You can use either seed oil or extra virgin olive oil.
Pour a not-full ladle of batter into the non-stick pan.
Spread it with the back of the ladle to the desired thickness, but quickly.
Slowly, just like a pancake on the surface, bubbles will form as the pancake batter thickens.
Turn with a spatula and continue cooking for another minute.
Place on a plate and continue until the batter is finished.
And here they are ready, Mom’s pancakes are harder to explain than to write down.
