New potatoes with salted ricotta, an easy and quick side dish ready in no time, without pre-cooking, a brand-new version of new potatoes with red onion.
Simply wash the potatoes well, dry them, and then place them in a bowl.
If they are a bit larger, to ensure even cooking of the ingredients, I recommend cutting them in half before adding the seasoning to the bowl.

Dry them and place them in a bowl, cutting the larger ones in half.
Season with oil and salt and mix quickly.
Add the freshly grated salted ricotta and mix all the ingredients well.
Spread them on a baking sheet lined with parchment paper, distributing them evenly.
Add the garlic clove without the skin.
