Olive focaccia with bowl dough, one of my favorite recipes, with just one bowl mixing and a few hours of rising.

I have been testing this recipe in different versions for some time now, and I am increasingly satisfied with its success.
Indeed, you won’t need to dirty work surfaces, because, thanks to the hydration of this dough and its workability, you can fold it with a spoon.
I will explain how in the recipe.

Ingredients
- 2 1/4 cups all-purpose flour
- 3 tbsps extra virgin olive oil
- 1 tsp dry yeast
- 1/3 cup water (warm)
- 2/3 cup milk (preferably at room temperature)
- 1 tsp fine salt
- 1.75 oz black olives (pitted)
- 1.75 oz green olives (pitted)
- 2 tbsps water
- 2 tbsps extra virgin olive oil

Steps
To make the Olive Focaccia with Bowl Dough, first dissolve the yeast in a glass with slightly warmed water.
Stir, wait a moment, and add it to the bowl in which you will have poured 200 g of flour.
Add the milk, chopped olives, the first tablespoon of oil, and mix.
Add the remaining flour, salt, and continue mixing with a spoon.
Cover and let rest for at least two hours or until doubled in size, in a place sheltered from drafts.
After this time, take the dough again and, with the help of a spoon, fold by gathering the dough from the bottom of the bowl and bringing it to the center.
Cover and let rest for 15 minutes.
Meanwhile, grease the bottom of a baking tray with a tablespoon of oil.
Spread the dough, on which you will have put the last drizzle of oil, first with the spoon and then by hand, reaching the edges of the bowl.
Preheat the oven to 430°F and bake the focaccia for 25 minutes.
As soon as it is out of the oven, brush with the emulsion of water and oil.
Great hot and cold, and for filling.
