Ingredients

  • 12 oz penne rigate
  • 2 cloves garlic
  • 2 zucchini (medium)
  • 2 tbsp extra virgin olive oil
  • 2.5 oz speck (cut into matchsticks)
  • 0.7 oz cheese (grated)
  • 1 tsp coarse salt (for pasta water)
  • 2 pinches fine salt

Steps

  • To prepare the Penne with speck and zucchini, first slice the zucchini into rounds after washing, drying, and removing the ends.

  • In a wok, brown the garlic in the extra virgin olive oil.
    Meanwhile, cook the pasta in plenty of salted water.

  • Add the zucchini to the garlic and brown well for 5 minutes, stirring occasionally.

  • Remove the garlic and add the speck, letting it color well.

  • Pour a ladle of pasta cooking water and stir.

  • Let the ingredients absorb the flavors for a minute.

  • Add the drained pasta and toss for another minute.

  • Finish with a sprinkle of grated cheese before serving.
