Pineapple Cocktail with Wine and Coconut Milk

Pineapple cocktail with wine and coconut milk, a special recipe for a special occasion.

Try it for your New Year’s Eve or for occasions to share with friends.

Slightly alcoholic, so not suitable for children, the pineapple cocktail involves the use of blended pineapple pulp and pineapple juice, to which the other ingredients are added.

You can also use sparkling white wine to make the cocktail even more lively.

If, however, you want a non-alcoholic drink, you can replace the wine with tonic water.

Below you will find the recipe for a delicious and refreshing dessert drink.

  • Difficulty: Very easy
  • Cost: Cheap
  • Rest time: 2 Hours
  • Preparation time: 10 Minutes
  • Portions: 4 people
  • Cooking methods: No cooking
  • Cuisine: Italian

Ingredients

  • 2.8 oz pineapple (fresh, cleaned)
  • 1 1/4 cups pineapple juice
  • 3.4 oz coconut milk
  • 3.4 oz white wine (can be sparkling)

Tools

  • 1 Blender
  • 1 Pitcher

Steps

  • To make the Pineapple Cocktail with Wine and Coconut Milk, first put the diced pineapple in the blender pitcher and cover it with pineapple juice.

My advice is to add the ingredients using the same graduated pitcher to collect all the liquids well.

  • Then add the coconut milk and finally the wine.

Blend until the diced pineapple is reduced to a puree.

  • Place inside a pitcher and let it rest in the refrigerator, covering it with plastic wrap if it does not have a lid.

  • Shake before serving to mix all the ingredients well.

You can also mix them with a spoon.

For garnish, you can use slices of fresh pineapple, as in the photo.
