Puff Pastry with Caramelized Cherry Tomatoes, a very trendy recipe that is easy, quick, and delicious.

To make it, I’ve created a base of glazed soy sauce, but alternatively, you can use balsamic vinegar or honey with a pinch of salt.

I was literally inspired by some reels on Instagram for this recipe, and of course, I couldn’t resist creating my own version with what I actually had in the fridge.

Ingredients

  • 12 yellow cherry tomatoes
  • 12 cherry tomatoes
  • to taste balsamic glaze (or soy sauce)
  • 6 slices leek (cut into rings)
  • 1 sheet puff pastry (rectangular)
  • to taste vegetable oil (for decorating and brushing)
  • to taste fine salt

  • Parchment Paper
  • 1 Brush

Steps

  • To make the Puff Pastry with Caramelized Cherry Tomatoes, first line a baking tray with parchment paper.

    Distribute a bit of glaze for each piece, making sure it’s enough to decorate the cherry tomatoes.

  • Place a ring of leek in the center of each glaze base.

  • Cut the cherry tomatoes in half after washing and drying them.
    Arrange them around the leek, alternating colors.

  • Drizzle a little oil over each group of cherry tomatoes and add a pinch of salt.

  • Unroll the puff pastry and cut it into six similar rectangles.
    Cover each group of cherry tomatoes with a puff pastry rectangle.
    Press gently with your fingers to adhere well.

  • Brush the surface with a little oil and bake in a preheated ventilated oven at 392°F (200°C) for 20-22 minutes.

  • The puff pastry surface should be beautifully golden.

  • Let it rest for a few minutes once baked, using a spatula.
