Puff Pastry with Caramelized Cherry Tomatoes, a very trendy recipe that is easy, quick, and delicious.
To make it, I’ve created a base of glazed soy sauce, but alternatively, you can use balsamic vinegar or honey with a pinch of salt.
I was literally inspired by some reels on Instagram for this recipe, and of course, I couldn’t resist creating my own version with what I actually had in the fridge.

Ingredients
- 12 yellow cherry tomatoes
- 12 cherry tomatoes
- to taste balsamic glaze (or soy sauce)
- 6 slices leek (cut into rings)
- 1 sheet puff pastry (rectangular)
- to taste vegetable oil (for decorating and brushing)
- to taste fine salt

- 1 Pizza Cutter
- Parchment Paper
- 1 Brush
- 1 Knife

Steps
To make the Puff Pastry with Caramelized Cherry Tomatoes, first line a baking tray with parchment paper.
Distribute a bit of glaze for each piece, making sure it’s enough to decorate the cherry tomatoes.
Place a ring of leek in the center of each glaze base.
Cut the cherry tomatoes in half after washing and drying them.
Arrange them around the leek, alternating colors.
Drizzle a little oil over each group of cherry tomatoes and add a pinch of salt.
Unroll the puff pastry and cut it into six similar rectangles.
Cover each group of cherry tomatoes with a puff pastry rectangle.
Press gently with your fingers to adhere well.
Brush the surface with a little oil and bake in a preheated ventilated oven at 392°F (200°C) for 20-22 minutes.
The puff pastry surface should be beautifully golden.
Let it rest for a few minutes once baked, using a spatula.
