Steps
To make the Rustic tart with zucchini and eggs, first wash, dry and trim the zucchini. Using a mandoline slicer, cut it into very thin slices.
In a large bowl, add 2 oz of grated cheese to the eggs, then add the salt and the chopped parsley.
Mix very well until you obtain a homogeneous mixture. Prick the base of the puff pastry with a fork after lining it in the pan. Pour in the egg mixture and arrange the zucchini slices to form small circles. Sprinkle the surface with the remaining grated cheese (about 1 oz) and fold the edges over. Brush them with sunflower oil and, if you wish, garnish with a little chopped parsley.
Bake in a preheated convection oven at 356°F for 45 minutes or until fully golden. Let cool slightly before serving. This recipe is ideal as a small appetizer or as a main course. Delicious warm or cold — you can easily prepare it in advance and store it in the refrigerator for up to 48 hours.
