Savory Pie without Flour with Asparagus and Cooked Ham

A recipe different from the usual, a perfect rustic pie for a picnic, Savory Pie without flour with asparagus and cooked ham, an easy seasonal recipe to make.

With the first warm sunny days, I am always looking for simple and tasty ideas to propose to my family and especially for you to prepare for your outings and day trips.

I haven’t done this in a while, partly due to family issues (almost completely resolved), and partly because I prefer to work when everyone else is on vacation to have free days during the week.

Ah, of course, it had to be a recipe with my favorite ingredients!

Asparagus has always been among the fresh produce from the land that I love to cook.

Did you know I’ve never bought them frozen? Sooner or later I’ll have to try them.

Below I leave you my recipe and a recap of my favorite ideas to make with asparagus.

Ingredients

  • 6 eggs (medium)
  • 10.5 oz asparagus (cleaned)
  • 2/3 cup cheese (grated)
  • 4 slices cooked ham
  • 2 pinches fine salt
  • 2 tsp coarse salt
  • to taste black pepper
  • 1 tbsp extra virgin olive oil
  • 3.5 oz mozzarella for pizza (well drained)

  • 1 Baking dish
  • 1 Fork

Steps

  • To make the Savory Pie without Flour with Asparagus and Cooked Ham, first clean the asparagus by removing the tough base of the stalk.

    Then, wash them under cold running water.

    Blanch them in plenty of salted water and cool them in a large bowl full of ice-cold water.

  • Meanwhile, in another bowl, beat the eggs with salt, pepper, half of the grated cheese, and a drizzle of extra virgin olive oil.

    Mix well with a fork.

  • Line a baking dish about 12 inches long with wet and squeezed parchment paper, and arrange the asparagus at the bottom.

    Pour the egg mixture over the asparagus.

    Bake for 30 minutes at 350°F in a preheated fan oven.

  • After this time, remove from the oven and garnish with the slices of cooked ham and the mozzarella, preferably well-drained and julienned.

    Finish layering with the remaining grated cheese.

  • Bake again at 350°F for 25 minutes or until the mozzarella is completely melted, being careful with cooking.

    Allow to rest in the turned-off oven for 5 minutes before removing.

    Great to enjoy as you prefer, hot, warm, or cold.
