Skillet Frittatoast with Melting Cheese, a recipe that has literally gone viral on the web in recent years.
I was obviously too curious not to try my hand at making it, and I tried to create my own version.
Compared to other frittatoasts you might find online, here you will find ingredients that set it apart, but you can certainly customize and fill it as you prefer.
As you have read, this recipe is perfect for making in a pan (mine is 8.5 inches in diameter) and you can even make it in the summer due to its quick execution and freshness.
A few small tips: use a good non-stick pan for cooking the frittata and cook everything on low heat. Keep the ingredients handy so you can use them immediately to fill the base after the first cooking.

Ingredients
- 8 slices sandwich bread
- 3.5 oz turkey breast (or deli meat of choice, you need 8 slices)
- 3.5 oz cheese (you need 4 slices)
- as needed extra virgin olive oil
- to taste fine salt
- to taste pepper
- 8 Eggs

Steps
To make the Skillet Frittatoast with Melting Cheese, first, work two eggs at a time in a bowl with a pinch of salt and pepper, using a fork to mix everything.
In a non-stick pan, pour the oil and spread it with paper towels.
When the pan is hot, pour in the eggs and let them set slightly.
Place two slices of sandwich bread on the soft part of the egg and continue to let the frittata set.
Flip it with the help of a spatula.
Place the turkey slices on the base with the sandwich bread slices.
On the lower part, place a slice of cheese and fold the parts of the frittata that protrude inside.
With the help of the spatula, close the toast.
Brown the toast well on both sides.
Before serving, let it rest for about 5 minutes.
You can prepare the frittatoast in advance, just skip the final cooking.
Store it wrapped in plastic wrap in the fridge until it’s time to toast it in the pan.
