Round zucchinis are grown from May to October in the field, and this is their best period.
It is also true that, thanks to greenhouse products, we can find them all year round but surely at a higher price than normal, and the flavor will not be the same, so let’s take advantage of their best period to enjoy them in all their freshness.

Ingredients
- 1 round zucchini (large to get at least 12 slices or two medium-sized)
- 2.1 oz cooked ham (in slices)
- 3.5 oz smoked scamorza (cut into cubes)
- to taste extra virgin olive oil
- to taste fine salt
- 6 teaspoons cheese (grated)
- 6 teaspoons breadcrumbs

Steps
To make the Stuffed Round Zucchini with Ham and Smoked Scamorza, first wash and trim the ends of the selected zucchinis.
Slice them very thinly.
As an alternative to the knife, you can use a mandoline to achieve a similar thickness.
Arrange them on a baking tray with parchment paper, sprinkle with salt on the surface, and add a drizzle of oil on all slices before baking them in a preheated fan oven at 356°F for 5 minutes.
Once the pre-cooking of the zucchinis is done, let them cool.
In the meantime, cut the smoked scamorza into cubes.
Divide the ham slices into more or less similar pieces as well.
On the base of the zucchini slices, lay out some pieces of cooked ham and some cubes of smoked scamorza.
Try to distribute the stuffing evenly.
Cover each base with the remaining slices and garnish the surface with a teaspoon of grated cheese and one of breadcrumbs.
It will not be necessary to use more oil, but you can do so if you prefer.
Bake again in a preheated fan oven at 374°F for 15 minutes.
