Chicken Sandwiches in sweet and sour with slightly caramelized red onion and lettuce, delicious, easy, quick, and perfect for any occasion.
For this recipe, I thought of cooking the chicken with the caramelized red onion, once cut into strips.
This way we can reduce cooking times and have a tastier final result.
Instead of the usual mayonnaise, I added cream cheese and tomatoes.
With this recipe, we can make approximately 9 sandwiches, but you can decide how many to make once the ingredients are assembled.

Ingredients
- 6 slices sandwich bread
- 10.5 oz chicken breast
- 1 red onion
- 3 tbsps water
- 1 tbsp sugar
- 2 tbsps extra virgin olive oil
- 2 tbsps soy sauce
- 1.8 oz sugarloaf (or Milan radicchio)
- 1.8 oz radicchio
- 3 smooth tomatoes
- 3.5 oz cream cheese

Steps
To make Sweet and Sour Chicken Sandwiches, first clean the chicken breast by removing any bone residues and slice it into strips.
Peel a red onion and cut it into thin rings.
In a non-stick pan, pour a generous amount of oil and sauté the onion for 5 minutes on low heat.
Add water and sugar and soften the onion for 5 minutes on low heat.
Add the chicken, soy sauce, and cook for 15 minutes, stirring occasionally.
Brown well, and let cool.
Spread a thin layer of cream cheese on each slice of sandwich bread.
Add the washed, dried, and thinly sliced lettuce and tomato, after washing it, also cut finely.
Try to distribute all the ingredients evenly among the sandwiches.
Add the cooked chicken.
Finish with more lettuce and close with another slice also spread with cream cheese.
Repeat for all slices and cut.
If you want to prepare them in advance, you can wrap them in plastic wrap and, after cutting them, store them in the refrigerator for up to one day.
