Trofie with Mushrooms and Bacon

Trofie with mushrooms and bacon, a simple and tasty main dish, really easy to make.

Honestly, I’ve never had as much trouble finding visually decent mushrooms as I did this year, but the ones I bought were still delicious.

For this recipe, I chose to use champignon mushrooms, the easiest to find.

The champignon, known in Italian as prataiolo, is grown practically all over the world and can be cooked in many different ways. Due to its versatility and relatively low price, it is also one of the most appreciated ingredients in cooking.

Perfect for making side dishes and main courses, great for creamy soups, the champignon or prataiolo mushroom is also easy to clean.

Once the stem part with the roots is removed, just use slightly dampened paper towels to gently clean the top of the mushroom and then consume it as desired.

The mushroom should never be washed. As they are spongy, they would absorb water and their flavor would change.

Ingredients

  • 14 oz trofie
  • 9 oz champignon mushrooms
  • 3.5 oz sweet bacon (cubed)
  • 3 tbsps extra virgin olive oil
  • 1.5 tsp coarse salt (for the water)
  • 2 pinches fine salt
  • 2 cloves garlic
  • 1 ladle water (from pasta cooking)
  • to taste cheese (grated, as desired)

Steps

  • To make Trofie with mushrooms and bacon, first prepare the mushrooms.

    Remove the part with the root, clean the top with slightly dampened paper towels, and slice them thinly.

  • Sauté the garlic in oil in a pan and add the mushrooms after a couple of minutes.
    Salt, stir, and cook over low heat for 10 minutes, stirring occasionally.

  • Add the bacon and let it color.
    No need to crisp it up as you will add a ladle of pasta cooking water at the end.

  • Meanwhile, cook the pasta in plenty of salted water and drain it al dente, making sure to reserve a ladle of its cooking water.

  • Add the ladle of water, the pasta to the pan with mushrooms, and stir over high heat for a minute.

    Turn off the heat and serve the dishes, perhaps topping with grated cheese.
