Couscous with turmeric, eggplants, and cherry tomatoes, with the addition of lactose-free primo sale cheese, is an easy and light recipe that can be made in very little time.
For this recipe, which I had in mind for some time, I used the air fryer to reduce preparation times, but even cooking them in the oven for 15 minutes or on the stove for the same time, we will still have an easy and quick recipe.

These days I am looking for rather light ideas but above all simple ones to make in the kitchen.
Keep in mind that I, between home and work, spend over half of my day at the stove, so every now and then I take a break from challenging recipes and throw myself into these practical ideas that I love to replicate even at work.
The couscous available in the market requires very little preparation time.
In my case, 5 minutes, with boiling water that I prepared in the microwave for 3 minutes.
The nice thing is that you can also make a quick vegetable broth, use a ready-made one, or flavor the water to have always different ideas.

Ingredients
- 10.5 oz raw couscous (precooked)
- 2 cups water (boiling)
- 2 pinches fine salt (for the couscous)
- 10.5 oz eggplants (cleaned)
- 3.5 oz cherry tomatoes
- 1 pinch fine salt (for the eggplants)
- 1 tsp turmeric powder
- 3 tbsps extra virgin olive oil
- 4.4 oz primo sale cheese (lactose-free)

Steps
To make the Turmeric Couscous with Eggplants and Cherry Tomatoes, first focus on preparing the couscous.
Bring the indicated amount of water to a boil and pour it into the bowl containing the couscous.
Add the turmeric, the salt, and a tablespoon of oil, and gradually fluff the couscous.
Take the eggplants, wash and dry them, and remove the stem.
Cut them first into slices about three-quarters of an inch thick, then into cubes.
Wash and dry the cherry tomatoes.
Put everything in the air fryer’s basket, add a bit of oil and salt, and mix.
Cook for 7 minutes, turning halfway through, and let them cool.
At this stage, you can easily remove the cherry tomatoes’ skin if you don’t like it.
While all the ingredients cool down well, dry the primo sale cheese and cut it into cubes of your preferred size.
Combine everything with the couscous, mix well, and if necessary, add another tablespoon of raw oil.
Let it rest covered in the fridge until serving time.
Store the couscous in the refrigerator for up to two days, if possible, adding the primo sale cheese only when serving.
FAQ (Questions and Answers)
How can I substitute air fryer cooking?
You can cook the eggplants in a pan with oil and salt along with the cherry tomatoes and a couple of tablespoons of water for about 15 minutes, on low heat, stirring often.
Or in the oven at 350°F, after placing them on a baking tray with parchment paper, for 15 minutes, following the same procedure as air fryer cooking.
