I had long been trying to make a similar recipe and pairing it with apples I was sure to achieve the desired result, in a few steps and very simply.
And then with its apple and cinnamon filling, it’s even more delicious.

Ingredients
- 1 apple
- 2 cups all-purpose flour
- 1 cup apple juice
- 1 packet baking powder
- cup sugar (alternatively, you can use brown sugar)
- to taste lemon zest (grated)
- cup sunflower seed oil
- 1 tsp ground cinnamon

Steps
To make the Vegan Plumcake with Apple Juice, first combine the sugar, cinnamon, and sunflower seed oil in the bowl and quickly mix them with the electric whisk.
Pour the apple juice and incorporate it into the initial mixture with the electric whisk.
Add the flour, baking powder, and grated lemon zest.
Mix the ingredients in the bowl until a smooth and homogeneous batter is obtained.
Pour it into a loaf pan lined with parchment paper and smooth it out.
Peel an apple, cut it in half, and then, after removing part of the core, slice it into very thin slices.
Distribute them on the surface of the plumcake.
Bake in a preheated convection oven at 356°F for 50 minutes.
Do the toothpick test to check if it’s cooked.
If it comes out dry once inserted, the cake is ready.
Let it cool slightly before removing it from the pan and slicing.
