- 4 cups whole wheat flour
- 1.5 cups water (lukewarm)
- 1 tsp fine salt
- 1.5 tsp active dry yeast
- 1 tsp acacia honey
- 1 tsp sugar (a pinch)
- 2 oz dried cranberries

Steps
To prepare the Whole Wheat Honey Bread with Cranberries, first dissolve the yeast, along with a pinch of sugar, in a pitcher containing lukewarm water.
In the mixer bowl, add the flour and combine the dissolved yeast in the water, the honey, and start kneading with the dough hook.
As soon as the dough begins to come together, add the salt, work it again with the dough hook, and then add the cranberries.
Continue working the mixture for 5 minutes at medium speed, always with the dough hook.
With the help of a dough scraper, bring the outer edges of the dough towards the center for a few turns, cover, and let it rise until it doubles in volume.
After this time, take the dough again, quickly gather it with the dough scraper, and work it on a lightly floured board, giving it folds, meaning bringing the outer edges towards the center 3-4 times.
Pinch the edges to seal the bread.
After shaping it into a long form, transfer it to a baking tray with parchment paper and let it rest covered with a cloth for 30 minutes. After this time, gently score the bread on the surface with a sharp knife and bake it in a preheated fan oven at 375°F.
Remove from the oven and let it cool slightly before enjoying.
