The Penne with shrimp and zucchini are a tasty first course ideal for everyday lunch and dinner. Also perfect cold to take to the beach. The sauce is prepared in very little time, even at the last minute. Once the sauce is ready, you just have to choose the type of pasta you prefer. I chose penne, but tagliatelle would also go well. In fact, if I had had more time, I would have made them: patience, maybe next time.

Ingredients Penne with shrimp and zucchini
- 14 oz penne rigate (ridged penne)
- 11 oz shrimp (fresh or frozen)
- 3 zucchini
- 1/3 cup white wine
- 1 cup cherry tomatoes
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
- 1 zest of 1 lemon
- to taste red pepper flakes
- 1 onion (small)
Steps Penne with shrimp and zucchini
Wash the zucchini, trim off both ends and slice them into rounds. Take a non-stick pan, add a drizzle of oil, the finely chopped garlic and add the zucchini. Let them sauté, stirring frequently. Once they are cooked, turn off the heat and season with salt. Once cooked, blend a couple of tablespoons in a food processor to obtain a fairly thick cream. You will use it later.
While the water for the pasta is heating, finely chop the onion and let it brown in a pan with a little oil. Add the cherry tomatoes cut into small pieces and cook for a few minutes.
As soon as they have softened, add the shrimp and after a few minutes deglaze with the white wine. Cover with a lid and let cook for a few minutes. Adjust with salt and red pepper flakes to taste.
Boil the penne, drain them al dente and transfer them to the pan with the zucchini. Add the shrimp and the blended zucchini and toss until the sauce is evenly distributed.
While the penne finish cooking in the pan, grate over the zest of one lemon and mix all the ingredients together once more.
