Ingredients
- 2.2 lbs squid rings
- 2 slices bread
- to taste chopped parsley
- to taste lemon zest
- 1 clove garlic
- 7 oz cherry tomatoes
- 2.5 oz grated Parmesan
- to taste extra virgin olive oil
Steps
Preparing the squid rings in the oven is really simple. Start by placing the two slices of bread in the bowl of a mixer or a simple blender, along with the garlic clove—you can also leave it out or use half—the lemon zest, I used a small piece, and the parsley. Blend everything to get a crumbly mixture.
Transfer everything to a bowl, add the grated Parmesan. If you have whole Parmesan, put it directly in the mixer to blend with the other ingredients.
Take the cherry tomatoes, wash them, dry them, and cut them into small pieces. Add these to the bowl and mix everything together.
Take the squid rings, wash them well under running water, and then dry them with paper towels. Put them in the bowl with the seasoning and mix with your hands to coat them.
Take a baking sheet, place a sheet of parchment paper on it, drizzle with some extra virgin olive oil, transfer the squid rings with all the seasoning, spreading everything well on the sheet, finish with another drizzle of oil and now cook in the oven at 355 degrees (F) preheated static oven for about 25 minutes, or in the air fryer at 340 degrees (F) for about 20 minutes. Once cooked, serve the squid rings hot and crispy.

The squid, once cooked, can be stored in the fridge for a couple of days, reheating before serving.
