I love CRISPY BAKED OR AIR FRYER CARROTS, tasty and delicious, the easy and quick recipe to cook carrots in the oven that come out super crispy with very little oil. A light but flavorful carrot side dish that goes well with everything, to accompany meat, fish, eggs, and cheese. Crunchy oven-baked carrot sticks with herbs and, if you like, with spices, the secret to making the carrots super crispy is to coat them in breadcrumbs and cornmeal, the result is amazing, you’ve never made carrots this good and everyone will love them at the table, even the little ones who usually don’t like to eat this vegetable. You can cook them in the oven or in the air fryer, they will turn out delicious and super crispy with both cooking methods. Ingredients
- to taste pepper
- to taste dried oregano
- to taste parsley
- to taste rosemary
- 1 tbsp breadcrumbs
- 1 tbsp cornmeal
- to taste extra virgin olive oil
- 5 carrots (large)
- to taste fine salt
Steps
Start by thoroughly washing the carrots, dry them, and peel them all with a vegetable peeler, removing the two ends as well. Cut the carrots in half, and then each half lengthwise.
Cut them again lengthwise until you have carrot sticks about 1/4 inch in diameter. Put the carrot sticks in a bowl and toss with a drizzle of EVO oil. Chop parsley and rosemary and add them to the bowl, also add salt and pepper, and mix everything to season.
Now add the tablespoon of breadcrumbs and the tablespoon of cornmeal, give everything a good mix again. Take a large and capacious baking sheet to place all the carrots on, place a sheet of parchment paper on top, drizzle with EVO oil, and place all the carrots on it, making sure not to overlap them, but to place them side by side, so they cook evenly. Top with a drizzle of oil and bake in a preheated ventilated oven at 356°F for about half an hour, if you cook in the air fryer, 356°F for 20 minutes. Once cooked, serve hot and crispy, but they are also delicious cold.
