CRISPY BAKED POTATO STICKS

These CRISPY POTATO STICKS, NOT FRIED BUT OVEN-BAKED, are quick to prepare, made with boiled potatoes and various seasonings. You can also cook them in an air fryer.

The easy and quick recipe to cook a tasty dish with boiled potatoes for the whole family, perfect to be served as an appetizer or enjoyed in a cocktail.

At home, they disappeared in no time, delicious to eat plain or dipped in sauces like mayonnaise or ketchup. You can customize the recipe for these potato sticks by adding paprika or chili to the mix, as well as little pieces of olives.

Ingredients

  • 25 oz boiled potatoes
  • 2 tablespoons potato starch
  • to taste spices (paprika curry)
  • to taste white pepper (powder)
  • to taste salt
  • to taste parsley
  • to taste extra virgin olive oil

Steps

  • To prepare the potato sticks, start by mashing the still warm potatoes with a potato masher; there’s no need to peel them if you use a press masher.

    Gather the potato puree in a bowl and let it cool.

  • Now add the chopped seasonings and spices, the potato starch, and the salt to the mixture, then work the ingredients to get a soft and homogeneous dough. Cover the dough in the bowl with plastic wrap and put it in the fridge for half an hour, so it will have time to become drier and more compact.

  • Take the dough, transfer it to a pastry bag, cut the tip of the bag to have a hole about an inch wide. Make strips of potato dough on a baking sheet with parchment paper; you can make the strips whatever length you want. I made them about 6 inches, but shorter ones of about 4 inches work as well, in this case, you’ll get more pieces.

  • Lightly oil the sticks; I gave a few sprays of extra virgin olive oil and bake in a preheated ventilated oven at 375°F for about 20 minutes, or in an air fryer at 355°F for about 17-20 minutes.

    Serve them hot, accompanied with dipping sauces if desired.

Once cooked, you can store the potato sticks for a couple of days; just heat them in the oven or air fryer before serving.

You can also serve them wrapped with a slice of speck or ham, a very cute idea for an appetizer or a standing dinner party, give it a try!
