The fake roman tripe is a humble and economical dish from Roman cuisine to prepare as an alternative to the classic meat tripe, this recipe uses an omelet cut into strips and then cooked in tomato sauce and Roman mint, all flavored with Pecorino Romano. It’s often prepared during Lent, on days when eating meat is not allowed.

With just a few simple ingredients: eggs, tomato, Pecorino Romano, and mint, you bring to the table a second course with delicious flavors and aromas, prepare a nice piece of bread for the final dipping, and you’ll taste how good it is!

Ingredients

  • 6 eggs
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil
  • 14 oz tomato sauce (canned tomatoes are also fine)
  • to taste extra virgin olive oil
  • 1 clove garlic
  • to taste salt
  • to taste Roman mint
  • to taste Pecorino Romano

Steps

  • In a saucepan pour the oil, place the peeled garlic clove inside and let it brown, then remove it and pour the tomato sauce and a little water into the saucepan.

    Season with salt, if desired, a pinch of pepper, mix, cover with the lid and cook the sauce, stirring it occasionally, it will need to cook for about 20-30 minutes.

  • While the sauce is cooking, prepare the omelet that will serve as fake tripe, so in a bowl break the eggs and beat them with a fork seasoning them with salt and pepper.

    Heat a pan with a drizzle of oil inside, pour in the beaten eggs and cook the omelet turning it halfway through cooking with the help of the lid or a plate.

    Once cooked, remove the omelet from the pan by transferring it to a plate and cut it into strips all of the same width, about 1.5 cm (0.6 in).

  • Once the sauce is also cooked, put the cut omelet inside the saucepan with it, stir and cook for another 5-10 minutes, to flavor the omelet.

    Add broken Roman mint leaves and plenty of grated Pecorino Romano and serve at the table, you will taste how good this dish is and see how easy it is to prepare!
