Ingredients
- 1 cup milk
- 1 cup limoncello
- 4 egg yolks
- 1/2 cup sugar
- 1/3 cup cornstarch (alternatively all-purpose flour)
- 40 Pavesini Gli Originali (4 snack packs)
- 1 cup wild strawberries
- 1 cup blackberries (fresh)
- 1 cup raspberries (fresh)
- 1/2 cup blueberries (fresh)
- as needed milk (for dipping the biscuits)
- as needed Limoncello (for dipping the biscuits)
Steps
Start with the cream, in a bowl combine the egg yolks with the sugar, beat with electric whisks until you have a nice fluffy and frothy mixture.
Add the sieved cornstarch and mix everything to get a smooth cream without lumps. Pour the milk and limoncello into a saucepan, stir and bring to a boil.
As soon as the milk and limoncello are about to boil, remove the saucepan from the heat, and pour half of it into the egg yolk, sugar, and flour mixture, mix well and pour everything back into the saucepan, stirring again. Put the saucepan back on low heat and thicken the cream, once cooked pour it into a bowl, cover it with plastic wrap in contact and let it cool completely before using it, first out of the fridge and then in the fridge.
In a plate, mix some milk and some limoncello, adjust the doses as you like, if you want your dessert to have a more alcoholic soak use more limoncello, otherwise more milk, or alternatively just milk.
Gently wash the berries and dry them by gently patting them with paper towels.
In each cup make a first layer with the Pavesini slightly dipped in the milk and limoncello, put some cream on top, you can use a pastry bag, add some berries and proceed with another layer of dipped Pavesini, cream, and fruit. Finish with a mint leaf to decorate the dessert. Serve the dessert with two Pavesini Gli Originali biscuits placed in the cups.
… Vane’s Tips
The cups can be stored in the fridge for up to two days.
They cannot be frozen because of the berries, as they would need to be consumed after cooking them.
Frozen berries cannot be used for this recipe; you must use fresh ones.
