A beautiful dish to serve at the table, alternating vegetables and sausage meatballs, all seasoned with herbs and a nice sprinkle of breadcrumbs that makes the vegetables delicious and the sausages crispy on the outside but tender and juicy inside.
I put potatoes, zucchini, and red Tropea onions in the tray, and for the meat, I used Luganega sausage, which I shaped into many small and tasty meatballs after removing it from the casing.
A main meat dish with a vegetable side that you cook all together is perfect to prepare all year round, and depending on the season, you can add or replace other vegetables.

Ingredients
- 4 potatoes
- 3 zucchini
- 2 red Tropea onions
- to taste salt
- to taste dried oregano
- to taste extra virgin olive oil
- 1.1 lbs Luganega sausage
- to taste extra virgin olive oil
- to taste breadcrumbs
Steps
To prepare this tasty tray of sausages with zucchini, potatoes, and onions in the oven, start with the vegetables. Wash the zucchini, trim them, and cut them into slices about 1/4 inch thick. Clean the onion and cut it into 1/4 inch rings, while the potatoes, once peeled, should be sliced very thinly, about 1/8 inch.
Put all the vegetables in a bowl and season them with herbs, salt, and oil, then mix well with your hands to flavor everything.
Take the sausage, I used Luganega, but individual sausages work fine too. Remove the meat from the casing and shape it into meatballs, forming little balls.
Take a baking tray, I used one 10 inches in diameter, coat the bottom and edges with oil and breadcrumbs. Place the vegetables and sausages inside, alternating them, watch the video to see exactly how to do it.
Bake in a preheated fan oven at 356°F for about half an hour, or in an air fryer at 320°F for about 25 minutes.

You can use meatball mix instead of sausage, making them the classic way with ground meat, egg, bread, and Parmesan cheese.
You can add other vegetables depending on the season and your taste, such as eggplant, peppers, etc.
