Pan-cooked Chicken with Cherry Tomatoes and Smoked Cheese

Creamy, gooey, and flavorful, PAN-COOKED CHICKEN WITH CHERRY TOMATOES, OLIVES, AND SMOKED CHEESE is an easy, quick, and tasty recipe to cook chicken and serve a delicious main course for the whole family.

Chicken is undoubtedly a dish we often cook at home, and we mostly find ourselves making it the same way, try cooking it following my recipe instead, and I’m sure you’ll find it delicious this way! Pan-cooked chicken with cherry tomatoes, olives, and gooey smoked cheese is simple and quick, and everyone loves it at the table. You can prepare and enjoy it hot and gooey or even warm, make it the day before, and heat it when serving, perfect for any occasion and season!

I used chicken breast slices that I cut into strips, but you can also use whole chicken slices, as well as chicken bites or fillets.

Ingredients

  • 21 oz chicken breast slices
  • as needed flour
  • as needed extra virgin olive oil
  • 2 cups cherry tomatoes
  • 3.5 oz smoked cheese (smoked variety works well too)
  • as needed fine salt
  • 3.5 oz pitted olives
  • as needed sage
  • 0.5 cup dry white wine

Steps

  • Start by cutting the chicken breast slices into thin strips; if you want, you can have your butcher do this cut. Once you have all the chicken strips, place some flour on a plate and coat the chicken well with flour.

  • Pour a couple of rounds of olive oil into a pan, heat it up, and add the floured chicken strips, cook over medium heat to brown them on all sides, pour in the white wine and let it evaporate. Season with salt, broken sage leaves, and olives, stir and lower the heat, cover with a lid, and let cook for about 15 minutes. If the sauce reduces during cooking, extend it with a little water.

  • Meanwhile, cut the cherry tomatoes and dice the smoked cheese. After the first fifteen minutes of cooking, add the tomatoes, stir, and continue cooking with the lid on for another five minutes.

    Finally, add the smoked cheese, give everything a good stir, and let it melt, and here are our gooey and tasty pan-cooked chicken strips ready to serve at the table, really delicious and super easy!

You can also prepare the chicken this way in advance, just don’t add the cheese if you do; instead, add it when you decide to serve it, then heat the chicken with the freshly added cheese.

The pan-cooked chicken with cherry tomatoes, olives, and smoked cheese keeps for two days in the refrigerator.

You can replace the smoked cheese with other cheese like provolone, Galbanino, or any cheese you like.
