Ingredients
- 3 zucchini
- 2 eggs
- 2 tablespoons all-purpose flour (rice flour can also be used)
- to taste fine salt
- 8 slices Roman pecorino cheese (or use Galbanino or Provola)
- to taste peanut oil (for frying)
Steps
Start by washing the zucchini and removing the ends, then grate them using a large-hole grater. Put the grated zucchini in a cloth and squeeze well to remove the excess water.
Place the zucchini in a bowl with the eggs, flour, and salt, mix the ingredients with a spoon. Heat some peanut oil in a pan, drop spoonfuls of the batter into the oil, place a small slice of cheese on top of each pancake, folding it if it is large, and add more batter on top to cover well.
Cook the pancakes on both sides, turning them a couple of times. Then remove the pancakes from the oil and place them on absorbent paper. Serve the zucchini pancakes stuffed with cheese hot with a creamy and melting heart, but they are also delicious cold.

You can also make zucchini pancakes with another type of flour, like rice flour. Once made, the pancakes can be kept for 3 days in the fridge, and reheated to taste before serving.
