PASTA WITH PESTO AND SHRIMP WITH A HINT OF LEMON is a quick and delicious dish that you can prepare in the time it takes to cook pasta. Basil pesto, shrimp, and lemon go perfectly together, creating a dish with an appetizing flavor and an enveloping aroma.

You will impress your guests with this easy and quick dish, perfect to make when you have little time or don’t feel like spending much time in the kitchen but still want to enjoy a good plate of pasta.
I recommend using good quality pesto, even better if homemade. Try the classic basil pesto or, for an extra touch, this pistachio one or even this zucchini one.
I used beautiful rigate farfalle pasta, but you can also use penne or spaghetti. This sauce is perfect for both long and short pasta.

Ingredients
- 10 jumbo shrimp (already cleaned)
- 1 lemon (juice and zest)
- to taste extra virgin olive oil
- to taste salt
- 14 oz pasta (I used rigate farfalle)
- 3/4 cup Genovese pesto
Steps
In a bowl, season the cleaned shrimp, free of shell, tail, and intestine, with half of the lemon juice and let it rest for 10 minutes.
This dish is easy and quick to prepare, done in the time it takes to cook the pasta. Once the shrimp are seasoned and the 10 minutes have passed, bring a pot of salted water to a boil, and once it boils, add the pasta to cook. Meanwhile, as the water boils and the pasta cooks, cook the shrimp in a pan with a couple of turns of oil over medium-low heat, adding the zest and remaining lemon juice.
Drain the pasta al dente and transfer it to the pan with the shrimp. If the shrimp sauce has dried out, add a little pasta cooking water, then stir to combine the flavors.
Now add the pesto and stir again to coat the pasta well. Finish with more grated lemon zest and serve this delicious first course at the table. You can also add chopped fresh basil on top.
