Ingredients
- 2 1/4 cups peaches (weight without pit)
- 3 eggs
- 3/4 cup sugar
- 1/2 cup sunflower oil (olive oil can also be used)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
Steps
Wash and dry the peaches, cut them into pieces, removing the pit, and blend them with the help of a mixer or blender until they become a puree.
Add the eggs, sugar, oil, vanilla, flour, and baking powder, and blend again until you have a smooth batter without lumps.
Pour the batter into a cake pan lined with parchment paper and bake in a preheated static oven at 350°F for about 45 minutes.
Once baked, use the skewer test to check doneness, let it cool in its pan. When serving, sprinkle with a little vanilla icing sugar or, for a more indulgent version, fill the cake with peach jam.
