The PIADELLA WITH PUMPKIN AND SPECK is perfect to prepare when you have little time or don’t feel like spending much time in the kitchen but still want to eat something delicious and appetizing.
With a rich and tasty filling with the autumn flavors and aromas of grilled pumpkin, speck, and gorgonzola, it’s also excellent for a dinner with friends, but also for eating at work instead of the usual sandwich.
I used as a base the Mulino Bianco Special Edition Tasty Piadelle in collaboration with Giallozafferano; they are made with dough with lard, rosemary, and black pepper, I found them delicious and perfect to be filled with the ingredients I chose.
Preparing the tasty Piadella with pumpkin and speck is very simple, follow me in the recipe, I am sure that once you try it, you will like it a lot!

Ingredients
- 3 Mulino Bianco Tasty Piadelle
- 7 oz gorgonzola
- 10.5 oz pumpkin
- to taste extra virgin olive oil
- to taste salt
- to taste rosemary
- to taste pepper
- 9 slices speck
Steps
Start with cooking the pumpkin, remove the peel, inner strings, and seeds, and cut it into thin slices about a quarter of an inch thick.
Heat the grill and cook the pumpkin slices for three minutes on each side.
Season the grilled pumpkin with EVO oil, salt, pepper, and rosemary.
Heat the Mulino Bianco Tasty Piadelle in a pan for 90 seconds on each side, then fill with gorgonzola, speck slices, and grilled pumpkin. Fold the Tasty Piadelle and serve them hot, if you like, you can also serve them by cutting them in half. I prepared them for a dinner with a couple of friends, at the table they were a huge success!
