- 2 Knorr Broth Heart
- 1 quart water
- 1 3/4 cups Carnaroli rice
- 1 head radicchio
- 1 shallot
- 3.5 oz stracchino
- 2 tbsps extra virgin olive oil
- to taste fine salt
- 3.5 oz red wine
Steps
To prepare the creamy risotto with stracchino and radicchio, start by making the broth by dissolving the Knorr Broth Heart in boiling water.
Then proceed to wash the radicchio leaves and cut them into strips with the help of a knife. Chop the shallot and let it soften in a pan with the extra virgin olive oil.
Add the radicchio and let it wilt, then add the rice, toasting it well by stirring with a wooden spoon, pour in the red wine, and let it evaporate. Now, add the broth little by little, using a ladle, and add more broth when the previous addition is almost absorbed.
Continue in this way until the rice is cooked; at the end, add the stracchino and stir well to melt the stracchino and make the risotto very creamy. Serve the radicchio and stracchino risotto hot and creamy, optionally adding finely sliced fresh radicchio on top.
