The SNOWBALL COOKIES are the Christmas treats I prepared on TV in my show on Channel10. We’ve officially entered the sweetest month, where fragrant treats and many other delicacies will be prepared! Throughout December, I will also be preparing many Christmas delicacies on TV!
The snowball cookies are delicious and fragrant American cookies without eggs in the dough, very buttery, with nuts and vanilla, they are soft, fragrant, and melt in your mouth!
The original snowball cookie recipe includes pecans; for my recipe, to make it more Italian, I used almonds, but you can also make them with walnuts or hazelnuts. I’m sure you’ll love this recipe as much as I did, these vanilla almond Christmas cookies without eggs are delicious and also very cute to give to friends and family or to serve at the table during the holidays along with all the other typical sweets of this period.

Ingredients
- 1 cup butter (cold but soft)
- 1 cup powdered sugar (plus extra for dusting)
- 2 tsp vanilla extract
- 1 pinch fine salt
- 2 cups all-purpose flour
- 1 cup blanched almonds
Steps
To prepare the snowball cookies, start by chopping the almonds, they should remain in small pieces, not pulverized.
In a large bowl, work the butter cut into chunks with the powdered sugar, using electric whisks to achieve a soft and homogeneous cream.
Add the vanilla, the pinch of salt, and mix well.
Gradually incorporate the flour and chopped almonds and mix until obtaining a compact dough, wrap it in plastic wrap, and refrigerate for at least half an hour.
Take the dough, form balls about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Bake the cookies for about 15-18 minutes, they should be golden at the edges but remain light and soft, they harden a little when cooling.
Once cooked, let the cookies cool a bit, then roll them in powdered sugar while still warm for the first coating.
Once completely cooled, roll them again in powdered sugar, place them on a plate, and serve at the table, too delicious, fragrant, soft that they melt in your mouth… a true Christmas delight!
