SOFT APPLE CAKE with Butter and Cinnamon

With the arrival of autumn, apple cake season begins at my house. Today’s star is the SOFT APPLE CAKE WITH BUTTER AND CINNAMON in the batter, a cake filled with apples with simple and authentic flavors and a unique aroma that surrounds you.

I don’t even know how many apple cakes or apple desserts I’ve published on my blog over the years, the buttery apple cake with a hint of cinnamon is easy and quick to prepare. It’s perfect for breakfast and snack time for the whole family, a cake that truly tastes of home, with those flavors and aromas of traditional desserts, the kind grandmothers make.

The batter is very simple to make, you just need to mix all the ingredients in a bowl: eggs, sugar, and flour, and in five minutes the cake is ready to bake. The aroma it releases during baking will fill the kitchen, a unique and inviting scent.

Ingredients

  • 4 eggs (large)
  • 4.2 oz granulated sugar
  • 4.2 oz butter
  • 5.3 oz all-purpose flour
  • to taste ground cinnamon
  • 1 tsp baking powder
  • 5 apples (large if small use 6)
  • 1 tbsp brown sugar
  • to taste powdered sugar

Steps

  • In a large bowl, pour in the room-temperature eggs with the granulated sugar and, using an electric mixer, work the ingredients until you have a fluffy and frothy mixture.

    With the mixer on low, add the melted and cooled butter.

    Incorporate the flour and baking powder into the batter by sifting them, then add the ground cinnamon, I used a couple of teaspoons.

    Mix everything to have a creamy batter without lumps.

  • Once the batter is ready, wash and peel the apples. I used Royal Gala apples, but Golden and Renette apples work well too; if the latter are smaller, use at least 7.

    Add the apples to the batter, mix, pour the entire batter into a 9-inch pan lined with parchment paper, level the surface, and sprinkle the brown sugar on top. Bake immediately in a preheated static oven at 350°F for about 45-50 minutes; baking times may vary from oven to oven.

    Once the cake is baked, let it cool in its pan. Before serving, cover it with a light dusting of powdered sugar.

… Vane’s tips

The apple cake with butter and cinnamon keeps for up to five days under a cake dome, better in the fridge from the third day.

The butter can be replaced with 3.4 oz of oil.

The apples can be replaced with other seasonal fruit, for example with pears. I suggest the Abate or Williams varieties.

You can replace the cinnamon with another type of aroma, such as lemon or orange zest.

Add pieces of chopped dried fruit to the batter to give the cake a more rustic flavor.
