These STUFFED PIZZA STICKS WITH TOMATO AND MOZZARELLA are today’s delicious recipe. Ingredients

  • 1 cup water (at room temperature)
  • 0.42 oz fresh yeast (0.18 oz if using dry yeast)
  • 1 teaspoon sugar
  • 3.2 cups all-purpose flour (00 flour works too)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fine salt
  • as needed extra virgin olive oil
  • as needed tomato sauce
  • 1 cup mozzarella
  • 3.5 oz scamorza
  • as needed salt

Steps

  • Dissolve the yeast in half of the water with the teaspoon of sugar. Place the flour in a large bowl, make a well in the center, and slowly pour the water with the dissolved yeast, start kneading and gradually add the remaining water. Once you have a rough dough, add the oil while continuing to knead, and finally the salt.

  • Transfer the dough to the table and continue kneading until you have a smooth, elastic, and homogeneous dough. Place the dough in a slightly oiled bowl, cover with plastic wrap, and let it rise until doubled in size, about four hours.

  • Take the risen dough, deflate it, and transfer it to the surface. Using a dough cutter, divide it into equal parts, aiming for about 12 pieces, or 18 if you prefer smaller sticks. Use your fingers to stretch each piece of dough into thin sticks.

  • In a bowl, season the tomato sauce with oil and salt. Cut the mozzarella and scamorza into very small pieces. Then fill each pizza strip with a little sauce and cheese. Close each strip, sealing the edges.

  • Place all the stuffed pizza sticks on a baking sheet, brush with a little extra virgin olive oil, and top with more sauce. Bake in a preheated fan oven at 375°F for about 10-15 minutes, remove from the oven, top with more scamorza and mozzarella, and back into the oven for 5 minutes. Serve the sticks hot and stringy, delicious, and so easy to make!
