Ingredients

  • 2 zucchini (if small, use 3)
  • 7 oz water
  • 1 3/4 cups all-purpose flour
  • 2 tsps instant yeast for savory preparations
  • to taste fine salt
  • to taste peanut oil
  • to taste pepper (optional)

Steps

  • Preparing zucchini fritters is quick and very easy. Start by mixing the dry ingredients in a large bowl, sifting the flour and yeast, then add the salt and mix well with a spoon.

  • Now pour the water into the dry ingredients, doing so slowly and stirring with a fork as you go. Continue stirring to have a smooth, lump-free batter. Take the zucchini, wash, dry, trim the ends, and slice into thin rounds.

  • Pour the peanut oil into a pot or pan, letting it heat well. Meanwhile, add the zucchini slices to the batter and mix everything together. When the oil is hot, drop spoonfuls of the batter into the oil, using two spoons, flipping the fritters with a clean spoon as they puff up.

  • When the fritters are puffed and golden, remove them from the oil with a slotted spoon and drain on paper towels. Continue with the rest of the batter, and once all the zucchini fritters are cooked, place them in a bowl and season while hot with salt and, if desired, ground black pepper. Serve the fritters hot; they are so good that they’ll disappear quickly at the table, take my word for it! ^_^
